Honey Mustard Glazed Carrots


Serves 4 


450g           Carrots (peeled and halved)

2 tbsp         Olive Oil

to taste       Coarse Salt & Ground Black Pepper


Glaze - Ingredients

30g       Dijon mustard

30g       American Mustard

65g       Chili Honey

1 tsp     Salt 

80g       Butter (melted)



Heat the oven to 350F. Place the carrots onto a baking tray and drizzle with olive oil, toss to coat, then season with your desired amount of salt and pepper. Cook for approx. 40 - 55 minutes, until done. In a small bowl mix the glaze ingredients together with a fork until thoroughly combined. Pour a little over the carrots in the last few minutes of cooking and reserve the rest for serving. This sweet and sharp glaze is a welcome addition to most roasted vegetables - bon appetit!
