Lemon Honey Cookies

 

Little lemony dots of baked happiness. These are bite sizes lemony cookies that are great to have with a cuppa. Invite your friend over for a cookie or, indulge and don't tell anyone you've made them - we know which path we'd take! (wink).

 

Cookie - Ingredients 

110g White Sugar

100g Butter

2 tsp Lemon Zest (approx.1 lemon)

20 drps Lemon Oil 

120g Honey

1 Egg

230g White Flour 

1 tsp Baking Powder

½ tsp Salt

60g Yogurt


Glaze - Ingredients

130g Powdered Sugar 

2 tbsp Lemon Juice 

2 tbsp Lemon Zest (approx.1 lemon) 

 

Method

Heat the oven to 350F. Cream the butter, white sugar and zest until light and fluffy. Add honey, lemon oil and egg, beat until smooth. Combine in another bowl, flour, baking powder, salt and mix thoroughly. Then, alternately mix smaller portions of the dry ingredients and the yoghurt into the creamed butter. Roll into 25g balls and bake on a tray, unpressed, for 20-22 minutes or until lightly browned. For the glaze, mix the powdered sugar and lemon juice together with the zest. Pour over warm/hot cookies and let cool. Store in an airtight container.
